A Miso-Yogurt Marinade for Chicken Thighs That Works in the Oven or on the Grill

A Miso-Yogurt Marinade for Chicken Thighs That Works in the Oven or on the Grill
Upgrade your weeknight routine with a quick, five-minute miso-yogurt marinade designed for chicken thighs. Created by Elena Marlowe on Pantry Latitude, this simple blend of yogurt, miso, and garlic gently tenderizes the meat while caramelizing into a rich, golden crust under high heat. Whether cooked in the oven or on the grill, it delivers foolproof flavor that even wins over skeptical eaters.

I have a marinade problem. Most of them are too fussy, too acidic, or too similar to each other.

This one solves all three.

It is a miso-yogurt marinade that takes five minutes to mix, works on chicken thighs, and holds up equally well in the oven or on the grill. It is tangy, savory, and produces a golden-brown crust that Matt once described as "the best part."

The Formula

Equal parts miso and yogurt. A little garlic. A little oil. That is it.

Ingredient

Amount (for 1.5 lbs thighs)

White or yellow miso

3 tablespoons

Plain yogurt (full-fat)

3 tablespoons

Neutral oil

1 tablespoon

Garlic, grated

2 cloves

Optional: ginger, lime, chili

1 teaspoon each

Whisk. Coat chicken. Let it sit for at least 30 minutes, up to overnight.

Why This Works

Two reasons.

First: Yogurt tenderizes without breaking down the meat too much. It contains lactic acid, which is gentler than the citric or acetic acid in citrus or vinegar marinades. Chicken stays firm, not mushy.

Second: Miso caramelizes. Under high heat, the sugars and amino acids in miso create a deep brown crust that tastes like it took hours to develop. It did not.

Oven vs Grill

Method

Temp

Time

Notes

Oven

425°F

22–25 minutes

Use a wire rack over a baking sheet for even browning

Grill

Medium-high

6–8 minutes per side

Clean the grates well — miso can stick

If the chicken is charring too fast, move it to a cooler part of the grill or lower the oven rack.

What Matt Thought

Matt's exact words: "This tastes like it came from somewhere good."

He does not ask what "somewhere good" means. I take the compliment.

Make It a Meal

  • Rice + quick-pickled cucumbers

  • Noodles + sautéed greens

  • Salad + avocado

Leftovers are great cold on a salad or chopped into a rice bowl the next day.

Substitution Logic

Instead of ...

Use ...

White miso

Red miso (use less, it is saltier)

Yogurt

Buttermilk or sour cream

Chicken thighs

Chicken breast (reduce cook time by 3–5 minutes)

Garlic

Shallot or onion powder

The Takeaway

A good marinade does three things: adds flavor, improves texture, and makes dinner easy. This one checks all three boxes. It takes five minutes to mix, works with what you have, and produces a reliably great piece of chicken.

That is the kind of recipe this blog is built on.
