I have a marinade problem. Most of them are too fussy, too acidic, or too similar to each other.
This one solves all three.
It is a miso-yogurt marinade that takes five minutes to mix, works on chicken thighs, and holds up equally well in the oven or on the grill. It is tangy, savory, and produces a golden-brown crust that Matt once described as "the best part."
The Formula
Equal parts miso and yogurt. A little garlic. A little oil. That is it.

Why This Works
Two reasons.
First: Yogurt tenderizes without breaking down the meat too much. It contains lactic acid, which is gentler than the citric or acetic acid in citrus or vinegar marinades. Chicken stays firm, not mushy.
Second: Miso caramelizes. Under high heat, the sugars and amino acids in miso create a deep brown crust that tastes like it took hours to develop. It did not.
